durum wheat variety ‘Lemnos’ is one of the oldest and most famous varieties, known for its quality characteristics with references to almost all educational and scientific books and has even been mentioned by Aristotle.
Nevertheless, in recent decades, its cultivation has stopped universally in the fields of the island.
In 2012 Christos Salamoussas procured a small amount of seed from the Cereals Institute in order to revive it and now we are able to grow the wheat 'Lemnos' in privately owned lands but also in cooperation with local producers through Contract Agriculture, having available grinding an excellent quality single variety, yellow flour type M .
It produces natural fragrances , is manageable and has a good structure , while there are no preservatives, improvers and other additives.
It is what every housewife & housewife who loves traditional recipes & homemade doughs needs as it has high water absorption and gives crunchy and well-expanded products .
