Fava of Lemnos 500gr

It was one of the most important products produced by the agricultural sector of the island with rich export activity in the 60's & 70's, but its cultivation was abandoned over the years.

In 2009 and after much effort, Christos Salamoussas found a quantity of seed in a hut in the area of Paliopoli in Ancient Volcano. This was followed by the analysis of the seed in the laboratories of the Department of Food Science and Nutrition of the University of the Aegean in Myrina, while the Agricultural Department of DUTH based in Orestiada gave directions on the methods of cultivation and harvesting.

It is the legume with the scientific name Lathyrus Ochrus and only the soils of our island can provide suitable soil for its growth on a global scale. Its cultivation is quite difficult as it needs low (in centimeters) but regular rainfall while the low height of the plant makes it difficult to thresh.

After its harvest, the stage of natural drying follows and then its cleaning from the peeling plant where the fruit passes through 6 pairs of stone mills.

The final product is Afkos , the fava of Lemnos that is constantly gaining ground in the competition with comparative advantages of its boiling and its rich taste .

Cook it with caramelized onions or mussels or with olives, salted sardines and onions.
